I am trying the Enterprise Edition. How can I change the default settings (such as default language to English US, as we are in the US)?

Using this path you can enable/disable the languages
Administration -> Settings -> GUI Settings -> GUI Languages
(Use the right mouse click of a laguage to enable/disable it)
You can set your default language from the top menu
Personal -> Profile
