The exact behaviour depends on your DAV client. If the client sends a 'delete' command followed by a 'create' command your document will be overeritten. On the othe hand if your client sends a single 'update' command, a new version will be producted.

no really suggested client, but the most used are WebDrive or NetDrive. These 2 are nice but tends to do a lot of prehemptive downloads.
On the other hand the out-of-the-box Windows DAV client is less sophisticated but more lightweight.
